The Thermaco Big Dipper is a highly effective automatic grease removal system.Installed within a commercial kitchen the Big Dipper uses a 3 stage process to filter out food waste, trap grease and then automatically discharge it into an external container for disposal or recycling.

The 3 stage process works in the following way -

Stage 1
Effluent passes into the Big Dipper and through an internal filter basket which filters out food waste.
Stage 2
‘Debris-free’ effluent passes into the central chamber where the oil content separates and rises to the surface - allowing cleaned water to pass under a baffle wall to the outlet.
Stage 3
Over the course of the day the separated oil forms a layer on the top of the central chamber. At pre-set times the Big Dipper activates a semi-submerged skimming wheel which skims the trapped oil and fat and discharges it into an external easy-to-empty flask for disposal.

By regularly emptying the trapped oil and fat the Big Dipper is always in optimum condition for removing grease and achevies a removal rate of over 95% compared to 40-60% for conventional grease traps.
